Description
A soft, moist banana snack cake made with Greek yogurt, oat flour, warm cinnamon, and chocolate chips. Naturally sweetened and perfect for breakfast, snacks, or a healthier dessert.
Ingredients
2 ripe bananas, mashed
1/2 cup Greek yogurt
1/4 cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 cup oat flour
1 teaspoon cinnamon
1/4 cup chocolate chips
1/2 teaspoon baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and prepare an 8×8-inch square baking pan.
2. Whisk together mashed bananas, Greek yogurt, honey, egg, and vanilla.
3. Stir in oat flour, cinnamon, baking powder, and salt until just combined.
4. Fold in the chocolate chips.
5. Spread batter evenly into the prepared pan.
6. Bake for 25–30 minutes until a toothpick inserted into the center comes out mostly clean.
7. Cool for 10 minutes, slice into 9 squares, and serve.
Notes
Use very ripe bananas for the sweetest flavor.
Do not overmix the batter.
Store refrigerated for up to 5 days or freeze for up to 3 months.
