Description
This Everything Bagel Cottage Cheese Biscuit is a soft, tender, savory single-serving biscuit made with cottage cheese, almond flour, egg, and everything bagel seasoning. It’s a quick protein-rich breakfast or snack with the familiar garlic, onion, sesame, and poppy seed flavor of an everything bagel.
Ingredients
1/2 cup cottage cheese
1/2 cup almond flour
1 large egg
1 tablespoon everything bagel seasoning
1/2 teaspoon baking powder
1/4 teaspoon salt
Instructions
1. Preheat the oven to 375°F (190°C).
2. Add the cottage cheese, almond flour, egg, everything bagel seasoning, baking powder, and salt to a mixing bowl.
3. Stir until all of the ingredients are evenly combined and a thick biscuit mixture forms.
4. Transfer the mixture to a parchment-lined baking sheet or small baking dish.
5. Shape the mixture into one evenly sized, moderately thick biscuit.
6. Bake for about 15–20 minutes, or until the biscuit is set and lightly golden on the outside and cooked through in the center.
7. Remove from the oven and let the biscuit cool for a few minutes before serving.
8. Serve warm on its own or split and use as a base for a breakfast sandwich.
Notes
Use finely ground almond flour for the best texture.
Cottage cheese adds moisture and protein to the biscuit.
Do not add extra almond flour simply because the mixture looks moist.
Shape the biscuit evenly so the center cooks at the same rate as the outside.
Everything bagel seasoning can vary in saltiness, so adjust additional salt if necessary.
Do not overbake or the biscuit may become dry.
Let the biscuit rest for a few minutes after baking so the center can set.
Serve warm for the best texture.
The biscuit can be refrigerated in an airtight container if you have leftovers.
Reheat gently before serving.
The baked biscuit can be frozen in a freezer-safe container and reheated after thawing.
