These Zero-Flour Cottage Cheese Cloud Rolls are ultra-soft, pillowy, high-protein rolls made with cottage cheese, eggs, and cheese. No flour, low-carb, and melt-in-your-mouth fluffy like a savory cloud.
Ingredients
1 cup cottage cheese (240g)
4 large eggs
1 cup shredded cheese (cheddar, mozzarella, or mix)
1 teaspoon baking powder
Salt and pepper to taste
Optional:
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Italian seasoning
Chili flakes
Fresh herbs (parsley or chives)

2. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper
3. Add cottage cheese and eggs into a blender and blend until completely smooth
4. Pour mixture into a bowl
5. Stir in shredded cheese, baking powder, salt, pepper, and optional seasonings
6. Mix until combined into a light fluffy batter
7. Scoop spoonfuls onto baking sheet and shape into small round rolls
8. Bake for 25–30 minutes until golden and puffed
9. Let cool for 5–10 minutes before serving
