Description
A fudgy Zero Carb Keto Greek Yogurt Brownie made with whipped egg whites and Greek yogurt, just 20 calories and 1.1g net carbs per brownie.
Ingredients
1 tablespoon oat fiber
½ cup unsweetened cocoa powder
½ cup sugar-free sweetener
1 teaspoon instant espresso or coffee
½ teaspoon baking powder
Pinch of salt
3 egg whites
¾ cup plain Greek yogurt
¼ cup nut or seed milk
1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 375°F. Line an 8×8 or 9×9 baking dish with parchment paper and spray with cooking oil.
2. Whisk together the oat fiber, cocoa powder, sweetener, espresso, baking powder, and salt in a large bowl.
3. In a medium bowl, beat the egg whites with an electric mixer on medium speed until frothy, then increase to high speed until stiff peaks form.
4. Add the yogurt, milk, and vanilla to the dry mixture. Mix until combined.
5. Add the meringue in three parts, folding carefully each time to preserve airiness.
6. Pour the batter into the prepared pan. Bake 25 minutes, until the edges crack and the top appears puffy. The center may still seem wet but will firm up during cooling. Let cool completely.
7. Slice into 16 equal squares.
Notes
Whip the egg whites to true stiff peaks for the best lift.
Fold the meringue in gradually, in three additions, to keep the batter airy.
Let the brownies cool completely before slicing.
