Description

Creamy warm banana coconut morning bake made with wholesome oats, ripe bananas, coconut milk, and toasted coconut for the ultimate cozy breakfast. Soft, naturally sweet, and perfect for meal prep, brunch, or healthy snacking.


Ingredients

2 cups rolled oats

3 ripe bananas

1 cup full-fat coconut milk

1/2 cup Greek yogurt or coconut yogurt

2 large eggs

1/4 cup honey or maple syrup

1 tsp vanilla extract

1/2 cup shredded coconut

1 tsp baking powder

1 tsp cinnamon

1/4 tsp salt

Optional toppings: banana slices and extra toasted coconut


Instructions

1. Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.

2. Mash bananas in a large bowl until mostly smooth.

3. Whisk in coconut milk, yogurt, eggs, honey, and vanilla extract until creamy.

4. Add rolled oats, shredded coconut, baking powder, cinnamon, and salt.

5. Mix until fully combined.

6. Pour mixture into prepared baking dish and spread evenly.

7. Top with banana slices and extra shredded coconut if desired.

8. Bake for 35–40 minutes until golden brown and center is set.

9. Allow bake to cool for 10 minutes before serving.

Notes

Use very ripe bananas for natural sweetness.

Full-fat coconut milk gives the richest texture.

Toast coconut before topping for deeper flavor.

Delicious served warm with coffee or chilled from the fridge.
