Description

This Walnut Cinnamon Chia Oatmeal Cake is soft, moist, and full of warm cinnamon flavor — the perfect cozy companion to your morning coffee.


Ingredients

Scale

2 cups rolled oats

2 tbsp chia seeds

1½ tsp ground cinnamon

1 tsp baking powder

¼ tsp salt

½ cup unsweetened applesauce

⅓ cup honey or maple syrup

1 cup milk

1 egg

1 tsp vanilla extract

½ cup chopped walnuts

2 tbsp melted coconut oil


Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan.

2. Mix oats, chia seeds, cinnamon, baking powder, and salt.

3. Whisk applesauce, honey, milk, egg, vanilla, and oil in another bowl.

4. Combine wet and dry ingredients, fold in walnuts.

5. Pour into pan and bake for 30–35 minutes.

6. Cool, slice, and serve.

Notes

For extra crunch, top with extra walnuts before baking. This cake keeps well in the fridge for up to a week or freezes beautifully.
