Description

Soft vanilla almond cake made with hidden cauliflower for incredible moisture and cozy bakery-style flavor.


Ingredients

Scale

2 cups cauliflower florets

2 eggs

1/2 cup maple syrup

1 cup almond flour

1/2 cup oat flour

1/4 cup melted coconut oil

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp cinnamon

Pinch of salt


Instructions

1. Steam cauliflower until soft.

2. Blend cauliflower with wet ingredients until smooth.

3. Mix in dry ingredients.

4. Pour batter into cake pan.

5. Bake until golden and set.

6. Cool before slicing.

Notes

Blend cauliflower completely smooth.

Do not overbake.

Optional sliced almonds add crunch.
