Description

An ultra-moist, tender pumpkin quick bread made with instant vanilla pudding mix, canned pumpkin puree, and warm fall spices.

Ingredients

Scale

1 3/4 cups (219 g) all-purpose flour

1 package (3.4 ounces / 96 g) instant vanilla pudding mix (dry)

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon pumpkin pie spice

1/2 teaspoon salt

1 cup (200 g) granulated sugar

1/3 cup (80 ml) vegetable oil

2 large eggs, lightly beaten

1 can (15 ounces / 425 g) pumpkin puree (not pumpkin pie filling)

Instructions

1. Preheat the oven to 350°F (175°C). Grease and flour a 9 x 5-inch loaf pan, or line it with parchment paper.

2. In a large bowl, whisk the flour, dry instant vanilla pudding mix, baking soda, cinnamon, pumpkin pie spice, and salt.

3. In a separate bowl, whisk the sugar, oil, and eggs until combined. Whisk in the pumpkin puree until smooth.

4. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.

5. Pour the batter into the prepared pan and smooth the top.

6. Bake for 55 to 60 minutes, until a toothpick inserted in the center comes out clean.

7. Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely before slicing.

Notes

Based on published vanilla pudding pumpkin bread recipes (the 3.4-ounce package of instant vanilla pudding mix, the 15-ounce can of pumpkin puree, the 1/3 cup of vegetable oil, and the 1 cup of sugar come from the version published by Donecook, and the 1 3/4 cups of flour, the 2 eggs, and the 350°F oven come from the version published by ChinDeep). The baking soda, spice, and salt amounts, the 55 to 60 minute bake time, the 9 x 5-inch pan, the mixing method, and the yield of 10 slices are estimates, and the recipe has not been tested.

Use instant pudding mix, not cook-and-serve, and add the mix dry, straight from the box.

Use plain pumpkin puree, not pumpkin pie filling.
