Description

Creamy, ivory-colored pralines made by cooking sugar and evaporated milk to soft-ball stage, then stirring in butter, white chocolate, vanilla and toasted pecans and walnuts and dropping the mixture onto parchment to set.

Ingredients

Scale

1 1/2 cups (300 g) granulated sugar

3/4 cup evaporated milk

1/4 teaspoon salt

4 tablespoons (1/2 stick) unsalted butter

3/4 cup (about 130 g) white chocolate chips or wafers

1 1/2 teaspoons vanilla extract

2 cups mixed pecan halves and walnut halves, lightly toasted

Instructions

1. Line two baking sheets with parchment paper or wax paper and set them next to the stove. Have a candy thermometer ready.

2. In a large, heavy-bottomed saucepan, combine the sugar, evaporated milk and salt. Cook over medium heat, stirring until the sugar dissolves.

3. Clip on the candy thermometer and keep cooking, stirring occasionally, until the mixture reaches 236°F (soft-ball stage), about 15 to 20 minutes.

4. Remove the pan from the heat. Immediately stir in the butter and white chocolate until melted and smooth, then stir in the vanilla.

5. Fold in the toasted pecans and walnuts.

6. Stir for 2 to 3 minutes, until the mixture thickens slightly and begins to look creamy and less glossy.

7. Working quickly, drop heaping tablespoons of the mixture onto the parchment, spacing them about 2 inches apart.

8. Let the pralines cool and set at room temperature for about 30 minutes before eating.

Notes

This is an original, untested recipe developed for Poulef to match the photos (white chocolate, walnuts and pecans, butter, milk, sugar and vanilla). It combines the classic praline method (cook to 236°F, stir off the heat, drop onto parchment) with white chocolate for a pale, creamy result. No tested source with these exact amounts could be opened, so test one batch before publishing.

Use a heavy-bottomed pan, since sugar mixtures scorch easily.

Humidity affects pralines. They set best on dry days.

If the mixture hardens before you finish dropping the pralines, stir in a teaspoon of hot milk or water to loosen it.
