Ingredients
2 cups (250g) all-purpose flour
1 cup (200g) granulated sugar
½ cup (115g) unsalted butter, softened (or ½ cup / 120ml vegetable oil)
1 cup (240ml) whole milk (or evaporated milk for richer flavor)
3 large eggs (room temperature)
2 tsp vanilla extract
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
For the Vanilla Glaze:
1 cup (120g) powdered sugar
2–3 tbsp milk or heavy cream
½ tsp vanilla extract
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan. Line it with parchment paper for easy removal.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and milk until smooth.
4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
5. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
7. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
8. While the cake cools, whisk together powdered sugar, vanilla, and milk to make the glaze.
9. Once the cake has cooled for at least 20 minutes, drizzle the glaze evenly over the top.
10. Let the glaze set before slicing and serving.
Notes
For best texture, use room-temperature eggs and butter.
Don’t overmix the batter — this keeps the loaf soft and tender.
Store leftovers in an airtight container for 3–4 days at room temperature or up to 7 days in the fridge.
This loaf also freezes beautifully — wrap tightly and store up to 2 months.
Add a teaspoon of lemon zest or almond extract for a fun flavor variation!
