Description

Traditional Italian Pizzelle are thin, delicate, crisp cookies made in a special pizzelle iron. Lightly sweet with buttery vanilla flavor and classic anise, they are perfect for Christmas, holidays, cookie trays, and serving with coffee.


Ingredients

3/4 cup granulated sugar

1/2 cup unsalted butter, melted

3 large eggs

2 tablespoons milk

1 teaspoon vanilla extract

1/2 teaspoon anise extract

1 2/3 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

Powdered sugar, for dusting (optional)


Instructions

1. Melt the butter and allow it to cool slightly.

2. In a large bowl, whisk together the sugar, melted butter, eggs, milk, vanilla extract, and anise extract until smooth.

3. Add the flour, baking powder, and salt. Whisk until a smooth, thick batter forms.

4. Let the batter rest at room temperature for about 1 hour.

5. Preheat the pizzelle iron according to the manufacturer’s instructions.

6. Place a small amount of batter in the center of each pizzelle pattern.

7. Close the iron and cook until the pizzelle are lightly golden and crisp, following the cooking time recommended for your iron.

8. Carefully remove the pizzelle and transfer them to a wire rack.

9. Cool the pizzelle completely without stacking them while warm.

10. Dust with powdered sugar before serving, if desired.

Notes

For traditional flavor, keep the anise extract. For a milder cookie, omit the anise and use vanilla only.

Do not overfill the pizzelle iron because the batter spreads as the iron closes.

Cool pizzelle completely on a wire rack before storing to help maintain their crisp texture.

Store completely cooled pizzelle in an airtight container at room temperature.

Warm pizzelle can be shaped into cones or cylinders immediately after cooking.
