Description
This traditional Welsh Teisen Mel (Honey and Spice Cake) is moist, warmly spiced, and beautifully sweet with honey. Perfect for teatime or gifting.
Ingredients
225g self-raising flour
1 tsp baking powder
1 tsp mixed spice
½ tsp ground cinnamon
100g light brown sugar
150g clear honey
100g unsalted butter
1 large egg, beaten
100ml whole milk
Instructions
1. Preheat oven to 160°C/320°F. Line an 8-inch cake tin.
2. Sift together flour, baking powder, mixed spice, and cinnamon.
3. Melt butter, sugar, and honey in a pan. Cool slightly.
4. Stir honey mixture into dry ingredients.
5. Beat in egg, then add milk gradually to make a smooth batter.
6. Pour into tin and bake 35–40 minutes, until golden and springy.
7. Cool before slicing and serving.
Notes
Wrap tightly and store at room temperature for 5 days.
Freeze slices for up to 2 months.
