Moist and cozy sweet potato cake topped with a rich ginger glaze.
Ingredients
1 cup mashed sweet potato
2 eggs
1/2 cup sugar
1/3 cup oil
1 tsp vanilla
1 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
Pinch salt
Instructions
1. Preheat oven to 180°C and prepare pan.
2. Mix mashed sweet potato, eggs, sugar, oil, and vanilla.
3. Combine dry ingredients.
4. Mix together until smooth.
5. Pour into pan.
6. Bake 35–45 minutes.
7. Cool and glaze.
Notes
Use smooth sweet potato puree.
Do not overmix batter.
Let cake cool before glazing.
Adjust glaze consistency.
