Description

This Sugar-Free Sticky Walnut Cake is rich, chewy, and packed with buttery walnut flavor. Naturally low carb and sweetened without sugar, it delivers a moist, sticky texture and comforting homemade taste that’s perfect for dessert, coffee breaks, or holiday baking.

Dry Ingredients:

2 cups almond flour

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

Wet Ingredients:

3 large eggs

1/2 cup allulose sweetener

1/3 cup melted butter

1 teaspoon vanilla extract

1/2 cup unsweetened almond milk

Walnut Layer:

1 1/2 cups chopped walnuts

2 tablespoons butter, melted

2 tablespoons sugar-free maple syrup

Optional Glaze:

2 tablespoons sugar-free maple syrup

1 tablespoon butter, melted


Instructions

1. Preheat oven to 350°F (175°C). Grease and line an 8-inch square baking pan.

2. In a large bowl whisk together almond flour, baking powder, cinnamon, and salt.

3. In another bowl whisk eggs, allulose, melted butter, vanilla extract, and almond milk until smooth.

4. Add wet ingredients to dry ingredients and stir until combined.

5. In a small bowl mix walnuts, melted butter, and sugar-free maple syrup.

6. Spread half the batter into prepared pan.

7. Sprinkle walnut mixture evenly over the batter.

8. Top with remaining batter and smooth gently.

9. Bake for 26 to 30 minutes until golden brown and set in the center.

10. Mix glaze ingredients and brush over warm cake.

11. Allow cake to cool before slicing into 12 squares.

12. Serve and enjoy.

Notes

Use finely ground almond flour for the best texture.

Do not overbake to maintain the sticky, chewy texture.

Store in an airtight container for up to 5 days.

Delicious served slightly warm with coffee or tea.

Can be frozen for up to 3 months.
