Description

These Sugar-Free Pistachio Carrot Cake Squares are soft, moist, warmly spiced, and topped with creamy vanilla frosting and crunchy pistachios. A lighter wholesome twist on classic carrot cake.


Ingredients

2 cups almond flour

2 cups grated carrots

3 eggs

1/3 cup unsweetened applesauce

1/2 cup sugar-free sweetener

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1 teaspoon vanilla extract

1 teaspoon baking powder

1/4 teaspoon salt

For the Frosting:

8 oz cream cheese

1/4 cup powdered sugar-free sweetener

1 teaspoon vanilla extract

For Topping:

1/3 cup chopped pistachios


Instructions

1. Preheat oven to 350°F and line a square baking pan with parchment paper.

2. Whisk almond flour, cinnamon, nutmeg, baking powder, and salt together.

3. In another bowl, whisk eggs, applesauce, vanilla extract, and sweetener until smooth.

4. Fold grated carrots into the wet mixture.

5. Combine wet and dry ingredients until fully incorporated.

6. Pour batter into prepared pan and smooth evenly.

7. Bake for 28–30 minutes until golden and set.

8. Allow cake to cool completely.

9. Beat cream cheese, powdered sweetener, and vanilla until smooth.

10. Spread frosting over cooled cake.

11. Top generously with chopped pistachios before slicing into squares.

Notes

Finely grate carrots for the softest texture.

Toast pistachios lightly for extra flavor.

Store refrigerated for best freshness.
