Description

Soft and gooey Sugar-Free Cinnamon Roll Bars with buttery cinnamon swirls and creamy vanilla glaze that taste like bakery-style cinnamon rolls without the sugar overload.

Ingredients

Scale

For the Bars:

2 cups almond flour

1/2 cup sugar-free granulated sweetener

1 tsp baking powder

1/4 tsp salt

1/2 cup butter melted

2 large eggs

1/3 cup plain Greek yogurt

1 tsp vanilla extract

For the Cinnamon Swirl:

3 tbsp butter softened

2 tbsp ground cinnamon

1/4 cup brown sugar substitute

For the Vanilla Glaze:

1 cup powdered sugar-free sweetener

2 tbsp heavy cream or almond milk

1/2 tsp vanilla extract

Instructions

1. Preheat oven to 350°F (175°C).

2. Line an 8×8-inch baking pan with parchment paper and lightly grease it.

3. In a large bowl whisk almond flour, sugar-free sweetener, baking powder, and salt together.

4. In another bowl mix melted butter, eggs, Greek yogurt, and vanilla extract until smooth.

5. Combine wet and dry ingredients until thick batter forms.

6. Spread batter evenly into prepared baking pan.

7. In a small bowl mix softened butter, cinnamon, and brown sugar substitute until creamy.

8. Drop spoonfuls of cinnamon mixture over batter.

9. Use a knife or toothpick to swirl cinnamon filling through the batter gently.

10. Bake for 22–28 minutes until edges are lightly golden and center is set.

11. Allow bars to cool slightly in the pan.

12. Whisk powdered sweetener, cream, and vanilla together until smooth glaze forms.

13. Drizzle glaze generously over warm bars.

14. Slice into squares and serve slightly warm.

Notes

Do not overbake to keep the bars soft and gooey.

Use fine almond flour for the best texture.

Bars taste even better after chilling for a few hours.

Warm slightly before serving for extra gooey cinnamon roll texture.
