Description

This Sugar-Free Carrot Cake Banana Bread is incredibly moist, warmly spiced, and naturally sweetened. It combines classic banana bread with carrot cake flavors and is finished with a creamy sugar-free frosting for the perfect healthy dessert loaf.


Ingredients

1/2 cup butter, softened

3/4 cup granulated sugar-free sweetener

1/4 cup brown sugar-free sweetener

2 large eggs

1 cup mashed ripe bananas

1 1/2 cups grated carrots

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1 1/2 teaspoons baking powder

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon salt

1 teaspoon vanilla extract

1/2 cup milk

1/2 cup chopped walnuts (optional)

1/2 cup raisins (optional)

Frosting:

8 oz cream cheese, softened

1/4 cup butter, softened

1/2 cup powdered sugar-free sweetener

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 350ยฐF (175ยฐC) and grease a loaf pan

2. In a large bowl, cream together butter and sugar-free sweeteners until light and fluffy

3. Add eggs one at a time, mixing well after each addition

4. Stir in mashed bananas and vanilla extract

5. Fold in grated carrots

6. In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger

7. Gradually add dry ingredients to wet ingredients, alternating with milk

8. Mix until just combined, do not overmix

9. Fold in walnuts and raisins if using

10. Pour batter into prepared loaf pan and smooth the top

11. Bake for 50โ€“60 minutes or until a toothpick inserted comes out clean

12. Allow bread to cool completely before frosting

13. Prepare frosting by beating cream cheese, butter, sweetener, and vanilla until smooth

14. Spread frosting evenly over cooled bread and serve

Notes

Use very ripe bananas for natural sweetness and moisture

Do not overmix the batter to keep the bread soft and fluffy

Grate carrots finely for best texture

Let the bread cool completely before adding frosting

Store frosting separately if freezing
