Description
Soft, chewy sugar-free Almond Joy cookies made with coconut, almond flour, and topped with chocolate drizzle and a whole almond.
Ingredients
Cookie dough:
1 1/2 cups unsweetened shredded coconut
1 cup almond flour
1/3 cup powdered monk fruit sweetener
1/4 tsp salt
1/4 tsp baking powder
1 large egg
1/4 cup melted butter
Topping:
1/4 cup sugar-free chocolate chips
1 tsp coconut oil
12 whole almonds
Instructions
1. Preheat oven to 350°F and line baking sheet.
2. Mix dry ingredients in a bowl.
3. Stir in egg and melted butter.
4. Form dough balls and flatten slightly.
5. Bake 10–12 minutes until lightly golden.
6. Press an almond into each cookie.
7. Melt chocolate with coconut oil and drizzle over cookies.
Notes
Do not overbake.
Use finely shredded coconut.
Let cookies cool before adding chocolate.
