Description

An easy no-bake layered dessert made with creamy condensed milk vanilla pudding, whipped topping, vanilla wafers, sliced bananas and fresh strawberries, chilled until soft and sliceable.

Ingredients

Scale

1 can (14 ounces) sweetened condensed milk

1 1/2 cups cold water

1 box (3.4 ounces) instant vanilla pudding mix

1 container (8 ounces) frozen whipped topping, thawed

1 box (about 11 ounces) vanilla wafers, plus 1/2 cup crushed for the top

4 medium ripe bananas, sliced

2 cups fresh strawberries, hulled and sliced, plus a few whole berries for garnish

Instructions

1. In a large bowl, whisk the sweetened condensed milk and cold water until smooth. Add the instant pudding mix and whisk for 2 minutes, until thickened.

2. Refrigerate the pudding for 5 minutes, then gently fold in the thawed whipped topping until no streaks remain.

3. Spread a thin layer of the pudding mixture in the bottom of a 9 x 13 inch dish or large trifle bowl.

4. Arrange a layer of vanilla wafers over the pudding, then add a layer of sliced bananas and sliced strawberries.

5. Spoon about one-third of the remaining pudding over the fruit and spread it evenly. Repeat the layers of wafers, bananas, strawberries and pudding twice more, finishing with a layer of pudding.

6. Sprinkle the crushed vanilla wafers over the top and decorate with whole strawberries and a few banana slices.

7. Cover and refrigerate for at least 4 hours, or overnight, until the wafers soften and the pudding sets. Serve cold.

Notes

Based on the widely published no-stove strawberry banana pudding (sweetened condensed milk, instant vanilla pudding mix, whipped topping, vanilla wafers, bananas and strawberries, chilled at least 4 hours). The sources’ exact amounts varied, so the quantities, the amount of water and the layering were developed for Poulef. It is untested, so test it once before publishing.

Slice the bananas just before assembling to keep them from browning. Coating them lightly with lemon juice also helps.

For a richer pudding, beat 4 ounces of softened cream cheese into the condensed milk before adding the water.
