For the Cake:

200 grams (1 cup) all-purpose flour

200 grams (1 cup) granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 tablespoon ground ginger

1 tablespoon grated orange zest

100 grams (1/2 cup) unsalted butter, softened

2 large eggs

120 ml (1/2 cup) milk

120 ml (1/2 cup) freshly squeezed orange juice

1 teaspoon vanilla extract

For the Caramel Glaze:

1/2 cup (100 grams) granulated sugar

2 tablespoons unsalted butter

1/4 cup heavy cream

Pinch of salt

1 tablespoon fresh orange juice

1 teaspoon orange zest

Optional Garnish:

Fresh orange zest

Candied orange peel

Chopped crystallized ginger


Instructions

1. Preheat the oven to 350°F (175°C) and grease or line an 8-inch round cake pan with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground ginger.

3. In a large bowl, beat the butter and sugar until light and fluffy.

4. Beat in the eggs one at a time, then mix in the vanilla extract and orange zest.

5. Alternately add the dry ingredients with the milk and orange juice, beginning and ending with the flour mixture. Mix until just combined.

6. Pour the batter into the prepared cake pan and smooth the top.

7. Bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.

8. Cool the cake in the pan for 10 minutes before transferring to a wire rack.

9. For the glaze, cook the sugar, butter, heavy cream, and salt in a saucepan until smooth. Remove from the heat and stir in the orange juice and orange zest.

10. Pour the warm caramel glaze over the cooled cake and garnish with fresh orange zest or candied orange peel before serving.

Notes

Fresh orange juice gives the brightest citrus flavor.

Do not overmix the batter to keep the cake soft and tender.

Watch the caramel carefully to prevent burning.

Allow the glaze to cool slightly before pouring over the cake.

Store leftovers covered at room temperature for 2 days or refrigerate for up to 5 days.
