Description

Grandma’s Southern sweet potato pound cake that is rich, moist, and perfectly spiced.


Ingredients

Scale

1 cup butter

2 1/2 cups sugar

4 eggs

2 cups mashed sweet potatoes

3 cups flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp ginger

1 tsp vanilla

1/2 cup buttermilk


Instructions

1. Preheat oven to 325°F

2. Cream butter and sugar

3. Add eggs one at a time

4. Mix in sweet potatoes

5. Combine dry ingredients

6. Alternate dry ingredients and buttermilk

7. Bake 70–80 minutes

8. Cool before serving

Notes

Use fresh sweet potatoes

Do not overmix

Grease pan well

Cool before slicing
