Description

This Southern Banana Cobbler is a cozy twist on banana bread—ripe bananas caramelized into a sweet filling, topped with a buttery pecan-oat streusel. Serve it warm with vanilla ice cream for the ultimate comfort dessert.

Ingredients

Scale

¾ cup packed light brown sugar

½ cup self-rising flour

½ cup (1 stick) unsalted butter, softened

1 cup uncooked old-fashioned oats

½ cup chopped pecans

6 ripe bananas, sliced

½ cup granulated sugar

¼ cup packed light brown sugar

½ teaspoon cinnamon

2 teaspoons vanilla extract

2 tablespoons lemon juice

2 tablespoons cornstarch

½ cup water

Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

2. In a saucepan, whisk together water, cornstarch, granulated sugar, brown sugar, cinnamon, vanilla, and lemon juice. Heat until slightly thickened.

3. Gently fold in sliced bananas and pour filling into the prepared baking dish.

4. In a mixing bowl, combine oats, flour, brown sugar, softened butter, and pecans until crumbly.

5. Sprinkle the streusel mixture evenly over the banana filling.

6. Bake for 30–35 minutes, until golden brown and bubbling.

7. Cool for at least 10 minutes before serving. Enjoy warm with vanilla ice cream.

Notes

Use very ripe bananas for the best flavor.

For gluten-free, substitute a 1:1 gluten-free flour blend and certified GF oats.

Swap pecans for walnuts or almonds if preferred.

Add shredded coconut or drizzle with caramel sauce for a flavor twist.
