Description
A soft and moist banana snack cake made with Greek yogurt, oat flour, vanilla, and chocolate chips. Perfect for breakfast, snacks, or a healthier dessert.
Ingredients
2 ripe bananas, mashed
1/2 cup Greek yogurt
1/4 cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 cup oat flour
1/4 cup chocolate chips
1/2 teaspoon baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch square baking pan.
2. Whisk together mashed bananas, Greek yogurt, honey, egg, and vanilla.
3. Stir in oat flour, baking powder, and salt until just combined.
4. Fold in the chocolate chips.
5. Spread batter into the prepared pan and top with extra chocolate chips if desired.
6. Bake for 25–30 minutes until a toothpick comes out mostly clean.
7. Cool for 10 minutes, slice into 9 squares, and enjoy.
Notes
Use very ripe bananas for the best sweetness.
Do not overmix the batter.
Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 months.
