Description

Soft, chewy cookies made with butter, oil, brown sugar, and honey, warmed with cinnamon and finished with flaky sea salt.

Ingredients

Scale

2 1/4 cups (280 g) all-purpose flour

2 teaspoons baking soda

1/2 teaspoon fine salt

1 1/2 teaspoons ground cinnamon

1/2 cup (113 g) unsalted butter, softened

1/4 cup (60 ml) neutral oil

1/2 cup (100 g) packed light brown sugar

1/3 cup (113 g) honey

1 large egg

1 teaspoon vanilla extract

Flaky sea salt, for sprinkling

Instructions

1. Whisk the flour, baking soda, fine salt, and cinnamon in a bowl.

2. In a large bowl, beat the butter, oil, and brown sugar until smooth and creamy. Beat in the honey, egg, and vanilla until combined.

3. Add the dry ingredients and mix until just combined. Cover and chill the dough for 30 minutes.

4. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

5. Scoop the dough into balls about 1 1/2 tablespoons each and place them 2 inches apart on the sheets.

6. Bake for 9 to 11 minutes, until the edges are set and the centers still look soft. Sprinkle each cookie with flaky sea salt right after they come out.

7. Cool on the pan for 5 minutes, then transfer to a wire rack.

Notes

Original Poulef recipe adapted from published salted honey cookies (The Peppermill, Wood & Spoon, and Raw Honey Guide) that combine butter and oil with brown sugar, honey, egg, vanilla, cinnamon, and flaky salt. The sources list 2 1/4 cups flour, 2 teaspoons baking soda, 1/2 teaspoon salt, and 1 1/2 teaspoons cinnamon. The butter, oil, sugar, honey, and egg amounts, chill time, bake time, and yield were not readable, so they are estimates and the recipe has not been tested.

Using some oil along with butter helps keep the cookies soft for days.

Chilling the dough keeps the cookies thick and helps them hold their shape.
