Description

Soft Maple Banana Yogurt Tea Loaf is an ultra-moist, tender banana loaf sweetened naturally with maple syrup and enriched with creamy yogurt. Perfect for breakfast, brunch, or cozy tea time, this loaf delivers a soft bakery-style crumb with warm banana flavor and a hint of cinnamon.


Ingredients

3 large ripe bananas, mashed

1/2 cup plain Greek yogurt

1/3 cup pure maple syrup

2 large eggs

1/3 cup melted butter (or neutral oil)

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

2–3 tablespoons milk (if needed)


Instructions

1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.

2. Mash bananas in a large bowl until mostly smooth.

3. Whisk in yogurt, maple syrup, eggs, melted butter, and vanilla extract.

4. In another bowl, mix flour, baking soda, baking powder, cinnamon, and salt.

5. Gently fold dry ingredients into wet mixture until just combined.

6. Do not overmix to keep the loaf soft and tender.

7. Add milk only if batter is too thick.

8. Fold in nuts if using.

9. Pour batter into loaf pan and smooth the top.

10. Bake for 50–60 minutes until golden and a toothpick comes out clean.

11. Cool before slicing.

Notes

Use very ripe bananas for best sweetness and flavor.

Do not overmix to avoid a dense texture.

Yogurt keeps the loaf moist and soft for days.

You can substitute maple syrup with honey if needed.

Store tightly wrapped to maintain freshness.
