Description

These soft Banana Brown Sugar Chocolate Chip Oat Bars are moist, chewy, and naturally sweetened with ripe bananas. Made with wholesome oats, creamy Greek yogurt, and melty chocolate chips, they’re the perfect quick breakfast, snack, or healthy dessert.


Ingredients

Scale

2 ripe bananas, mashed

1/2 cup Greek yogurt

1/4 cup brown sugar

1 egg

1 teaspoon vanilla extract

1 cup oat flour

1/2 cup rolled oats

1/2 teaspoon baking powder

Pinch of salt

1/3 cup chocolate chips


Instructions

1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.

2. In a large mixing bowl, mash the ripe bananas until mostly smooth.

3. Add Greek yogurt, brown sugar, egg, and vanilla extract to the mashed bananas and whisk until smooth and creamy.

4. Stir in oat flour, rolled oats, baking powder, and a pinch of salt until just combined.

5. Fold in the chocolate chips using a spatula.

6. Pour the batter into the prepared baking pan and spread evenly.

7. Bake for 20–25 minutes until the center is set and the edges are lightly golden.

8. Allow the bars to cool in the pan for about 15 minutes before slicing into squares and serving.

Notes

Use very ripe bananas with brown spots for the best natural sweetness.

Do not overbake the bars to keep them soft and moist.

You can add chopped walnuts, pecans, or peanut butter chips for extra flavor.

Store leftovers in an airtight container in the refrigerator for up to 5 days.

These bars freeze well for up to 3 months.
