Fluffy and zesty simple orange muffins, perfect for breakfast, snacks, or dessert.
Ingredients
1 ¾ cups (210 grams) all-purpose flour
¾ cup (149 grams) granulated sugar
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 large egg
¾ cup (177ml) freshly squeezed orange juice
⅓ cup (78ml) vegetable oil
1 tablespoon orange zest
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 375°F (190°C) and prepare a 12-cup muffin tin.
2. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
3. In another bowl, beat egg, then stir in orange juice, oil, orange zest, and vanilla.
4. Combine wet and dry ingredients until just mixed.
5. Divide batter into muffin cups and bake 18–22 minutes.
6. Cool before serving.
Notes
Use fresh orange juice for best flavour.
Do not overmix to keep muffins light and fluffy.
Store in an airtight container for freshness.
