This simple coconut cake with honey is moist, gluten-free, and perfect for comforting afternoons.
Ingredients
2 cups almond flour
1/2 cup unsweetened shredded coconut
1/2 cup honey
3 large eggs
1/3 cup coconut oil, melted
1/2 cup coconut milk
1 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
Instructions
1. Preheat oven to 350°F and line pan.
2. Whisk eggs, honey, oil, coconut milk, and vanilla.
3. Stir in almond flour, coconut, baking powder, and salt.
4. Pour batter into pan and sprinkle coconut on top.
5. Bake 35–40 minutes until golden.
6. Cool before slicing.
Notes
Do not overbake.
Let cool fully for clean slices.
Drizzle with honey before serving if desired.
