Description

This self-saucing butterscotch pudding bakes into a soft sponge with a rich, glossy butterscotch sauce underneath. Cozy, nostalgic, and incredibly easy.


Ingredients

Pudding Batter:

1 cup all-purpose flour

2 teaspoons baking powder

¼ teaspoon salt

½ cup brown sugar

½ cup milk

2 tablespoons melted butter

1 teaspoon vanilla extract

Butterscotch Sauce:

½ cup brown sugar

2 tablespoons cornstarch

1¼ cups boiling water


Instructions

1. Preheat oven to 350°F (180°C) and grease a baking dish.

2. Mix flour, baking powder, salt, and brown sugar.

3. Stir in milk, melted butter, and vanilla.

4. Spread batter into baking dish.

5. Sprinkle brown sugar and cornstarch over batter.

6. Pour boiling water over top without stirring.

7. Bake 35–40 minutes until set on top.

8. Serve warm with sauce underneath.

Notes

Do not stir after adding boiling water.

Best served warm.

Great with vanilla ice cream.
