Description

Healthy nut and seed energy cookies made with oats, honey, nut butter, and crunchy seeds. Naturally sweetened and perfect for kids and busy days.


Ingredients

Scale

1 cup rolled oats

½ cup mixed nuts, chopped

¼ cup mixed seeds (pumpkin and sunflower)

⅓ cup honey or maple syrup

¼ cup nut butter

1 large egg

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon salt


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet.

2. Mix oats, nuts, seeds, cinnamon, and salt.

3. Stir in honey, nut butter, vanilla, and egg.

4. Let dough rest 5 minutes.

5. Scoop and flatten cookies.

6. Bake 12–15 minutes until lightly golden.

7. Cool before serving.

Notes

Naturally sweetened and filling.

Great for lunchboxes and snacks.
