Description

Rustic Almond Ricotta Biscuits are soft, tender almond-scented cookies made with creamy ricotta cheese and finished with a sprinkle of ground almonds.


Ingredients

½ cup butter, softened

½ cup brown sugar, lightly packed

½ cup sugar

1 large egg

1 teaspoon almond extract

1 cup ricotta cheese

2 cups all-purpose flour

1 teaspoon baking powder

1½ cups finely ground almonds, divided


Instructions

1. Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.

2. Using a handheld mixer, beat the butter, brown sugar, and sugar together until light and fluffy.

3. Add the egg and almond extract; mix well.

4. Mix in the ricotta cheese until fully incorporated.

5. Add the flour, baking powder, and 1 cup of the ground almonds; mix on low speed until just combined.

6. Using a 1-tablespoon scoop, portion the dough into balls and place on the prepared baking sheet, spacing them about 2 inches apart.

7. Press the back of a fork onto each ball to flatten it to about ½ inch thick.

8. Sprinkle the remaining ½ cup ground almonds over the tops of the biscuits.

9. Bake for exactly 13 minutes. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Make sure the butter is fully softened before creaming for a light, fluffy base.

Mix in the flour, baking powder, and almonds on low speed and only until just combined to keep the biscuits tender.

Space the dough balls a full 2 inches apart since they spread slightly as they bake.
