These Rice Cake Protein Cookies are crispy, chewy, naturally gluten-free, low in sugar, and packed with protein. Made with crushed rice cakes, vanilla protein powder, natural peanut butter, and a touch of sugar-free syrup, they’re an easy healthy snack that’s perfect for breakfast, meal prep, or post-workout fuel.
Ingredients
4 plain gluten-free rice cakes, crushed
1 scoop (30g) vanilla protein powder
½ cup natural peanut butter (or almond butter)
1 large egg
2 tablespoons sugar-free maple syrup (or monk fruit syrup)
1 teaspoon vanilla extract
½ teaspoon baking powder
¼ teaspoon sea salt
2 tablespoons unsweetened almond milk (if needed)
2 tablespoons sugar-free chocolate chips (optional)
Instructions
1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Crush the rice cakes into small pieces, leaving some larger crunchy bits for texture.
3. In a mixing bowl, whisk together the crushed rice cakes, protein powder, baking powder, and salt.
4. Add the peanut butter, egg, sugar-free syrup, and vanilla extract.
5. Mix until a thick dough forms. If the dough is dry, add almond milk one tablespoon at a time.
6. Fold in the sugar-free chocolate chips if using.
7. Scoop about 2 tablespoons of dough onto the prepared baking sheet.
8. Gently flatten each cookie with the back of a spoon.
9. Bake for 10–12 minutes or until the edges are lightly golden.
10. Allow the cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.
Notes
Use certified gluten-free rice cakes and protein powder if needed.
Natural peanut butter provides the best texture.
Do not overbake—the cookies continue to firm up while cooling.
Store in an airtight container for up to one week.
Freeze for up to three months for easy meal prep.
