Description

Creamy no-bake cheesecake bites made with cream cheese, powdered sugar, graham cracker crumbs, and crushed freeze-dried raspberries, chilled, rolled into balls, and dipped in smooth white chocolate.

Ingredients

Scale

8 ounces (227 g) cream cheese, softened

1/2 cup (60 g) powdered sugar

1 teaspoon vanilla extract

3/4 cup (85 g) graham cracker crumbs

1/3 cup (about 15 g) freeze-dried raspberries, finely crushed, plus extra for garnish

12 ounces (340 g) white chocolate, chopped, or white candy melts

1 tablespoon coconut oil

Instructions

1. In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla until completely smooth.

2. Stir in the graham cracker crumbs and the crushed freeze-dried raspberries until a thick, evenly pink dough forms.

3. Cover and refrigerate for 1 hour, until firm enough to roll.

4. Line a baking sheet with parchment paper. Roll the mixture into 1-inch balls, about 24 in total, and place them on the sheet. Freeze for 20 minutes.

5. Melt the white chocolate and coconut oil in a microwave-safe bowl in 30-second bursts, stirring until smooth.

6. Dip each chilled ball into the melted chocolate with a fork or toothpick, tapping off the excess, and return it to the parchment.

7. Sprinkle with a little crushed freeze-dried raspberry while the coating is wet. Refrigerate for 30 minutes to set.

8. Store in an airtight container in the refrigerator.

Notes

Original Poulef recipe adapted from published no-bake white chocolate raspberry cheesecake balls (such as Happy Candy Kingdom, Recipes by Clare, and My Homemade Recipe) that combine cream cheese, powdered sugar, vanilla, graham cracker crumbs, and raspberries, chill and roll the mixture, and dip it in white chocolate. The amounts were not readable from the sources, so they are estimates and the recipe has not been tested.

Freeze-dried raspberries add flavor without extra moisture, so the balls stay firm.

Keep the balls refrigerated, since they contain cream cheese.
