Description

This Quick Apple, Rum and Grape Cake is a soft and comforting homemade dessert perfect for an impromptu snack or afternoon coffee. Tender apples, rum-scented grapes, and a fluffy buttery cake come together in a simple recipe that is quick to prepare and full of cozy flavor.


Ingredients

Scale

2 eggs

150 g sugar

100 ml milk

100 g melted butter

125 g all-purpose flour

1 teaspoon baking powder

1 teaspoon vanilla extract

2 apples, peeled and diced

100 g grapes (seedless)

2 tablespoons dark rum

1 pinch salt

Powdered sugar for dusting (optional)


Instructions

1. Preheat the oven to 180°C (350°F) and grease a small cake pan.

2. In a bowl whisk the eggs and sugar until light and slightly creamy.

3. Add the milk, melted butter, and vanilla extract and mix well.

4. In another bowl combine the flour, baking powder, and salt.

5. Gradually add the dry ingredients to the wet mixture while stirring gently.

6. Fold in the diced apples and grapes.

7. Add the rum and gently mix to distribute the flavors.

8. Pour the batter into the prepared pan and spread evenly.

9. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.

10. Allow the cake to cool slightly before removing from the pan.

11. Dust with powdered sugar before serving if desired.

Notes

Soaking the grapes in rum for 10 minutes enhances the flavor.

You can replace rum with orange juice for an alcohol-free version.

This cake tastes even better the next day as the fruit flavors develop.

Serve warm with coffee or tea.
