Description

A creamy spiced pumpkin pie layer topped with a crunchy cake mix, pecan, and toffee bit topping, drizzled with melted butter and baked in a 9×13 dish.

Ingredients

Scale

For the pumpkin layer: 1 can (15 ounces) pure pumpkin puree (not pumpkin pie filling)

3/4 cup (150 g) granulated sugar

1/4 cup (55 g) packed brown sugar

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/2 teaspoon salt

2 tablespoons cornstarch

4 large eggs

1 1/2 cups (360 ml) milk

For the crunch topping: 1 box (about 15.25 ounces) yellow cake mix

1 cup pecan chips or finely chopped pecans

1/2 cup toffee bits

1/2 cup (113 g) unsalted butter, melted

Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.

2. In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, cinnamon, nutmeg, ginger, cloves, salt, and cornstarch until smooth.

3. Whisk in the eggs, then the milk, until the mixture is smooth and well combined.

4. Pour the pumpkin mixture into the prepared baking dish.

5. Sprinkle the dry cake mix evenly over the pumpkin layer without stirring. Scatter the pecans and toffee bits over the cake mix.

6. Drizzle the melted butter evenly over the top, covering as much of the dry cake mix as you can.

7. Bake for about 50 to 55 minutes, until the center is set and the topping is golden and crisp. If the topping browns too quickly, cover loosely with foil.

8. Cool for 15 to 20 minutes and serve warm, with whipped cream or vanilla ice cream if you like.

Notes

Adapted from the Easy Pumpkin Crunch Cobbler by Inside BruCrew Life, using the ingredient list reprinted on Just A Pinch: pumpkin, sugars, cinnamon, nutmeg, ginger, cloves, salt, cornstarch, 4 eggs, 1 1/2 cups milk, yellow cake mix, pecan chips, toffee bits, and melted butter in a 9×13 dish. The can size, eggs, milk, cake mix, pecans, toffee bits, and butter follow that listing. The sugar and spice amounts, oven temperature, bake time, and yield (12 servings) were not available in the source excerpt and are estimates, and the recipe has not been tested.

Use pure pumpkin puree, not pumpkin pie filling, which already contains sugar and spices.

Do not stir the cake mix into the pumpkin layer.
