Description
Soft, gooey Pumpkin Banana Blondie Squares made with banana, pumpkin puree, peanut butter, and oat flour — the perfect healthy fall dessert.
Ingredients
2 bananas (mashed)
1/2 cup pumpkin puree
1/2 cup peanut butter
1/3 cup Greek yogurt
1/4 cup honey or maple syrup
1 egg
1 cup oat flour
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp cinnamon
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8 pan with parchment paper.
2. Mash bananas in a bowl.
3. Whisk in pumpkin, peanut butter, yogurt, honey, egg, and vanilla.
4. Add dry ingredients and stir until combined.
5. Pour batter into pan and smooth top.
6. Bake 25–30 minutes until golden and gooey.
7. Cool before slicing.
Notes
For gooier tops, slightly underbake. Add chocolate chips or swirl peanut butter for extra flavor.
