Ingredients
1 cup water
1/2 cup butter
1 cup flour
4 eggs
Pinch of salt
2 cups whole milk
4 egg yolks
1/2 cup sugar
3 tbsp cornstarch
3 tbsp praline paste
1/4 cup butter
1 cup sugar
1/2 cup toasted hazelnuts
Instructions
1. Prepare the choux pastry dough.
2. Pipe and bake cream puffs.
3. Prepare praline pastry cream.
4. Fill cooled cream puffs.
5. Cook caramel and prepare praline topping.
6. Stack cream puffs into tower.
7. Drizzle caramel and serve.
Notes
Do not open oven early while baking choux.
Cool pastry completely before filling.
Work carefully with hot caramel.
