Description

Ingredients

1 cup all-purpose flour

1/2 cup ground pistachios

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup honey

1 medium pear, peeled and diced

1/4 cup crushed pistachios


Instructions

1. Preheat oven to 350°F (175°C) and grease an 8-inch or 9-inch cake pan.

2. Whisk together the flour, ground pistachios, baking powder, baking soda, and salt.

3. Cream the butter and sugar until fluffy.

4. Beat in the eggs, vanilla, and honey.

5. Mix the dry ingredients into the wet ingredients until just combined.

6. Fold in the diced pear.

7. Spread the batter into the prepared pan and sprinkle with crushed pistachios.

8. Bake for 35–40 minutes until golden and a toothpick inserted into the center comes out clean.

Notes

Use ripe but firm pears.

Toast the pistachios for extra flavor.

Store covered for up to 5 days.
