Description
These Pineapple Cookies are soft, chewy, and made with cream cheese and real crushed pineapple. Finished with a tangy pineapple glaze, they taste like sunshine in every bite.
Ingredients
For the Cookies:
4 oz cream cheese, softened
½ cup salted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¾ cup crushed pineapple, well drained
For the Glaze:
1 cup powdered sugar
2–3 tablespoons reserved pineapple juice
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets.
2. Beat cream cheese, butter, and sugar until fluffy.
3. Add egg and vanilla and mix well.
4. Whisk flour, baking powder, and salt.
5. Add dry ingredients to wet ingredients.
6. Fold in drained pineapple.
7. Scoop dough onto baking sheets.
8. Bake 12–14 minutes until edges are set.
9. Cool completely.
10. Whisk glaze and drizzle over cookies.
Notes
Drain pineapple very well to prevent excess moisture.
Do not overbake to keep cookies soft.
Glaze once cookies are fully cooled.
Store chilled for best freshness.
