Description
Soft and chewy pineapple coconut bars made in an 8×8 pan with simple pantry ingredients.
Ingredients
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 cup sweetened shredded coconut
3/4 cup crushed pineapple, well drained
Instructions
1. Preheat oven to 350°F and line an 8×8 pan.
2. Whisk butter and sugar.
3. Add eggs and vanilla.
4. Stir in dry ingredients.
5. Fold in coconut and pineapple.
6. Bake 30–35 minutes.
7. Cool completely and slice.
Notes
Drain pineapple very well.
Do not overbake for best texture.
Bars slice clean once cooled.
