Description

Chewy, nostalgic Peanut Butter Lunch Lady Bars topped with creamy chocolate-peanut butter frosting — just like school days, but even better.


Ingredients

1 cup unsalted butter, melted

2 cups granulated sugar

1 cup creamy peanut butter (divided)

2 large eggs, beaten

2 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

Frosting:

1/2 cup creamy peanut butter

1/2 cup unsalted butter, softened

2 cups powdered sugar

1/4 cup milk

2 tbsp cocoa powder

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F and line a 9×13 pan with parchment.

2. Mix melted butter, sugar, 1/2 cup peanut butter, eggs, and vanilla until smooth.

3. Stir in flour, baking soda, and salt until combined.

4. Spread batter evenly and bake for 20–25 minutes.

5. Cool completely.

6. Prepare frosting by beating all frosting ingredients together until smooth.

7. Spread frosting on cooled bars and slice.

Notes

Store bars in an airtight container at room temperature for 4 days or refrigerate up to 1 week.

Freeze individually for up to 3 months.
