Description
Soft, fudgy, protein-rich triple chocolate muffin bars made with Greek yogurt, peanut butter, oat flour and cocoa. Perfect for a healthy breakfast, snack or portable treat.
Ingredients
1 cup Greek yogurt
1/3 cup peanut butter (creamy, natural)
2 eggs
1/3 cup honey
1 teaspoon vanilla extract
1/2 cup cocoa powder
1 1/4 cups oat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 to 1/2 cup chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8 or 9×9 pan with parchment.
2. Whisk Greek yogurt, peanut butter, eggs, honey and vanilla until smooth.
3. Add cocoa powder, oat flour, baking powder and baking soda; fold gently.
4. Fold in chocolate chips, reserving some for the top.
5. Spread batter into the pan and top with reserved chips.
6. Bake 20–25 minutes until set and a toothpick comes out with moist crumbs.
7. Cool 10–15 minutes in pan, then transfer to rack and slice into 12 bars.
Notes
For dairy-free: use coconut yogurt and dairy-free chocolate chips.
Use certified gluten-free oat flour if needed.
To make muffins, divide into muffin tins and bake 16–20 minutes.
