Description
This Healthy Peanut Butter Greek Yogurt Soft Chocolate Chip Bread Loaf is ultra-moist, naturally sweetened, and high in protein. Made with bananas, oat flour, and creamy peanut butter for a perfectly tender and wholesome treat.
Ingredients
2 ripe bananas (mashed)
1/2 cup Greek yogurt
1/3 cup creamy peanut butter
2 eggs
1/3 cup honey
1 teaspoon vanilla extract
1 1/2 cups oat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips, plus extra for topping
Instructions
1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
2. Whisk bananas, Greek yogurt, peanut butter, eggs, honey, and vanilla.
3. Add oat flour, baking soda, and salt; fold gently.
4. Fold in chocolate chips.
5. Pour batter into the loaf pan; top with extra chips.
6. Bake 35–45 minutes or until a toothpick comes out mostly clean.
7. Cool 10 minutes in the pan, then transfer to a rack.
Notes
For a dairy-free version, use coconut yogurt.
Use certified gluten-free oats if needed.
Cool completely before slicing for cleaner cuts.
