Description

Chewy Peanut Butter Greek Yogurt Cookie Pie Bars with crackled tops, naturally sweetened with honey and made with wholesome oat flour.


Ingredients

Scale

½ cup peanut butter

½ cup Greek yogurt

¼ cup honey or maple syrup

1 egg

1 teaspoon vanilla extract

1 cup oat flour

½ teaspoon baking powder

¼ cup chocolate chips


Instructions

1. Preheat oven to 350°F (175°C). Line an 8×8 baking dish with parchment paper.

2. Whisk together peanut butter, Greek yogurt, honey, egg, and vanilla.

3. Stir in oat flour and baking powder until smooth.

4. Fold in chocolate chips and spread batter into prepared pan.

5. Bake for 20–25 minutes until tops are golden and crackled.

6. Cool completely before slicing into bars.

Notes

Store at room temperature for 2 days or refrigerate up to 5 days.

Freeze individually wrapped bars for up to 2 months.

For extra gooey bars, underbake slightly.
