These Peanut Butter Greek Yogurt Cookie Pie Bars are chewy, naturally sweetened, and packed with rich peanut butter flavor and melty chocolate.
Ingredients
1/2 cup peanut butter
1/2 cup Greek yogurt
1/4 cup honey or maple syrup
1 large egg
1 teaspoon vanilla extract
1 cup oat flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup chocolate chips
Instructions
1. Preheat oven to 350°F and line baking pan
2. Mix peanut butter, yogurt, honey, egg, and vanilla
3. Stir in oat flour, baking powder, and salt
4. Fold in chocolate chips
5. Spread batter into pan
6. Bake 20–25 minutes until crackled on top
7. Cool completely before slicing
Notes
Use natural peanut butter
Do not overbake for best texture
Chill before slicing for clean bars
