These Healthy Peanut Butter Greek Yogurt Brownie Blondies are fudgy, protein-packed, and naturally sweetened with honey or maple syrup. Perfect for dessert, meal prep, or a wholesome afternoon snack!
Ingredients
½ cup peanut butter
½ cup Greek yogurt
¼ cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
½ cup oat flour
2 tablespoons cocoa powder
½ teaspoon baking powder
¼ teaspoon salt
¼ cup chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.
2. In a mixing bowl, whisk together peanut butter, Greek yogurt, honey (or maple syrup), egg, and vanilla until smooth.
3. Add oat flour, cocoa powder, baking powder, and salt. Stir until just combined.
4. Fold in chocolate chips, if using.
5. Spread the batter evenly in the prepared pan.
6. Bake for 20–25 minutes, or until the edges are set but the center is slightly soft.
7. Cool completely in the pan before slicing into blondies.
Notes
For a dairy-free version, substitute Greek yogurt with coconut yogurt.
To make them vegan, use a flax egg (1 tbsp ground flax + 3 tbsp water).
Do not overbake if you want fudgy blondies.
Store leftovers in an airtight container for up to 3 days at room temperature, 1 week in the fridge, or 2 months in the freezer.
