Description
Ultra-moist banana muffins made with peanut butter and Greek yogurt for protein and richness. Studded with chocolate chips and topped with a thick gooey chocolate layer.
Ingredients
2 ripe bananas mashed
1/2 cup creamy peanut butter
1/3 cup plain Greek yogurt
1/4 cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup chocolate chips
3/4 cup dark chocolate chips for topping
1 teaspoon coconut oil
Instructions
1. Preheat oven to 350°F and line a muffin tin with liners.
2. Mash bananas in a large bowl.
3. Whisk in peanut butter, Greek yogurt, honey, egg, and vanilla.
4. Add flour, baking soda, baking powder, salt, and cinnamon.
5. Mix gently until combined.
6. Fold in chocolate chips.
7. Divide batter into muffin liners.
8. Bake for 18-22 minutes until set.
9. Melt chocolate with coconut oil.
10. Spread melted chocolate over muffins and let set before serving.
Notes
Use ripe bananas for natural sweetness.
Thick Greek yogurt gives the best texture.
Store muffins in the refrigerator for freshness.
