Description
Moist, protein-packed banana bread bars made with peanut butter, Greek yogurt, and bananas, topped with gooey dark chocolate.
Ingredients
2 ripe bananas (mashed)
½ cup peanut butter
½ cup Greek yogurt
¼ cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 cup oat flour
½ teaspoon baking powder
½ cup dark chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.
2. Mash bananas in a large bowl.
3. Whisk in peanut butter, Greek yogurt, honey, egg, and vanilla.
4. Fold in oat flour and baking powder.
5. Spread batter into pan and top with chocolate chips.
6. Bake 22–25 minutes until golden and set.
7. Cool before slicing into bars.
Notes
Store in fridge for 5 days or freeze for 2 months. Swap almond butter or coconut yogurt for variations.
