Description
These healthy apple pie bread bars are made with peanut butter, Greek yogurt, and gooey chocolate chips for the perfect wholesome snack or dessert.
Ingredients
1 apple, peeled & diced
1/2 cup peanut butter
1/3 cup Greek yogurt
1/4 cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 cup oat flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8 pan with parchment paper.
2. Mix peanut butter, Greek yogurt, honey/maple syrup, egg, and vanilla until smooth.
3. Stir in oat flour, baking powder, cinnamon, and salt until just combined.
4. Fold in diced apples and chocolate chips.
5. Pour batter into prepared pan and bake 25–30 minutes.
6. Cool completely before slicing into bars.
Notes
Store in an airtight container at room temperature for 3 days, in the fridge for 1 week, or freeze up to 2 months.
