These Healthy Peanut Butter Greek Yogurt Apple Pie Blondies are gooey, wholesome, and packed with fall flavor. Made with oat flour, grated apples, and creamy peanut butter, they’re the perfect balance of indulgence and nutrition.
Ingredients
2 apples (peeled and grated)
½ cup peanut butter
½ cup Greek yogurt
¼ cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 cup oat flour
½ teaspoon baking powder
¼ cup chocolate chunks (optional)
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8 pan with parchment paper.
2. Peel and grate the apples.
3. Mix peanut butter, Greek yogurt, honey, egg, vanilla, and cinnamon in a bowl.
4. Fold in oat flour and baking powder.
5. Add grated apples and chocolate chunks.
6. Pour into pan and bake 25–30 minutes until golden and soft in the center.
7. Cool before slicing into blondies.
Notes
These blondies taste even better the next day as the flavors meld.
For a dairy-free version, swap Greek yogurt with coconut yogurt.
Add chopped nuts for crunch or a drizzle of melted chocolate on top for extra indulgence.
